Caribbean Salsa

You will need:
150g beef tomatoes
80g onions
50g red chilli
50g coriander
Squeeze of 2 fresh limes
200g fresh pineapple
Pinch of sea salt
Dash of olive oil
Method
1.
Cut the tomatoes, onions and pineapple into small dices
2.
Thinly slice the chili (remove the seeds if you’re not a fan of the heat)
3.
Roughly chop the coriander
4.
Mix all ingredients together and serve with bread or corn chips. Also pairs perfectly with grilled fish or chicken.


Roasted Pumpkin Soup

This recipe will make 5L of soup.
You will need:
2kg pumpkin, peeled and roughly chopped
750g white onions, roughly chopped
50g of crushed garlic
500g carrots, peeled and chopped
50g of thyme
5 bay leaves
2L of vegetable stock
10g of salt
10g of white pepper
7.5g of turmeric powder
Method
1.
Pre-heat your oven to 180 degrees

In a larger bowl, add the pumpkin, salt & pepper, half of the olive oil & the turmeric powder - evenly coat the pumpkin. Place all on a baking tray and roast for 20 minutes.
3.
Meanwhile, in a large pot add the onions, garlic and thyme and sautéed until the onion starts to brown. Add the pumpkin and mix well. Add all the stock.
4. 
Bring to the boil and reduce the liquid by 1/3rd. Take the pot off the heat and blitz together once cool. Check the seasoning and add to taste.

Place in the fridge to chill. The soup will last up to 3 days in an airtight container, or you can freeze portions to enjoy anytime!


Cucumber, Mint, Coriander Gazpacho

You will need:
4 cucumbers - peeled, seeded and chopped. 
1 1/12 seedless grapes
1 small clove of garlic
1/3 cup of olive oil
1/3 cup of mixed coriander and mint, picked
2 teaspoons of white vinegar
1 cup of water
Salt
Method
1.
In a blender, combine the cucumbers, grapes, coriander, olive oil, vinegar and 1 cup of water.

Puree until smooth and season with salt.
3.
Serve chilled, and garnish with coriander and sea salt.
4.
If you like, you can add poached prawns and toasted chopped almonds for a tasty garnish!


Chimmichurri

You will need:
1 cup of finely chopped coriander
6 garlic cloves, crushed
3 red chillies, finely diced (leave the seeds if you like the heat)
10g salt
Pinch of pepper
1 cup of olive oil
6 tablespoons of red wine vinegar

Method
Add all the ingredients into a mixing bowl, making sure to taste along the way and add seasoning if you need. This sauce is perfect on grilled meat, chicken or fish!
